IDAHO FALLS — A food truck named “The Rexburger.” You might think it’s a business based in Rexburg. But a millennial from Rigby decided Idaho Falls would be the perfect place for her new burger joint.
“Food trucks are really popular on the coast and they are starting to work their way to the middle of the United States so I wanted to bring one here to Idaho – in my home town,” Monica Young, the owner, tells EastIdahoNews.com.
Young returned to her roots after living in North Dakota and didn’t want to return to a “traditional” work day. She researched ways she could start her own business and decided to pursue the food truck industry.
“I wanted to think of something that was different,” Young says. “Burgers were different from the taco trucks that we already have here.”
Inspired by her love of cooking for others and and an Indian taco recipe, Young’s concept for her burgers are unlike anything else in east Idaho.
She wraps all of her burgers in “Idaho Fry Bread” dough, consisting of potatoes and potato flour, and then throws the burger into a deep fryer.
“It’s definitely a lot more work but I believe it tastes a lot better,” Young says. “When it’s wrapped in the fry bread, it’s a lot more easy to manage.”
The most popular burger is the Rexburger, which consists of steak, hamburger, bacon, cheese, and sauce.
Another hit? The Mormon burger – a meatloaf, funeral potato combo.
“I was attracted by the Mormon Burger,” customer Tami Nickerson says. Nickerson is a Virgina native who frequented food trucks back east. She’s happy to see a unique burger truck in town.
“You should try it,” Nickerson said. “It’s great!”
Young says customers are welcome to order burgers to-go or call ahead and pick up their food. The Rexburger is located on the corner of Broadway and Utah Ave.
